The "Bible" of the Italian "organic" system, the "who's who" of the sector, including all the useful information to discover it, is once again available in its 2011 edition. "TuttoBio" can be bought in the main Italian bookshops,(but also via web: www.biobank.it) such as Feltrinelli, MelBook store, or in organic food shops.
"TuttoBio" includes a BioBank report, published every year since 1993. In 2010 it made a photograph of about 8,500 operators, discovering that there is a very dynamic "organic" panorama in Italy: for each operator going out of the sector, there are three new entries.
Concerning the categories of organic operators taken into account, the picture is the following:
- "Fair" purchase groups (GAS): +55%, from 479 in 2008 to 742 in 2010
- E-commerce +38%, from 110 to 152
- Farms selling directly: +25%, from 1,943 to 2,421
- Restaurants +24%, from 199 to 246 (those linked to agrotourism are excluded)
- Agritourisms: +11%, from 1,178 to 1,302
- School canteens +10%, from 791 to 872
- Small markets +7%, from 208 to 222
- Shops: +4%, from 1,114 to 1,163.

On about 8,500 operators censed in Italy, 3,500 are linked to direct selling:
- 2,421 farms selling directly to consumers
- 222 organic markets
- 770 purchase groups

To classify operators, BioBank examined the Italian regions with their highest density every 100,000 inhabitants. The first place goes to Trentino-Alto Adige, with three records: GAS, canteens and markets. At the second place, the Marches, with a record for direct sales, restaurants, markets. The record for the total number of operators belongs (actually since the beginning of the enquiries) to Emilia-Romagna, Lombardia and Toscany. Emilia-Romagna gets the record for four types of operators: farms selling directly, canteens, markets and e-commerce; Lombardia for three (GAS, restaurants, shops), and Toscany is the leader concerning agritourisms.

"TuttoBio"includes many other interesting issues, like around 100 operators introducing and proposing their productions, certified organic cosmetics and detergents, the detailed list of Italian certification bodies, examples of organic labelling, and so on.
